Description
Makes a good side dish, serving ~5 people.
Ingredients
- 3-4 Carrots
- A generous teaspoon of carraway seeds
- Sultanas (or raisins)
- Juice of a lemon
- Fresh mint leaves
Directions
- Peel, top ānā tail and then grate the carrots into a bowl.
- Add the raisins, carraway seeds
- Finely chop the mint leave and add them to the mix.
- Juice the lemon and then pour over the mixture and stir to mix.
Variations
- The mint leaves can be omitted for a more gentle taste
- You can optionally add a little sugar at the very end to take the edge off the lemon.
